Vegan AF(ish)

Paris Anton is the chef and owner of Vegan AF(ish), a hyper-local, seasonal celebration of our region. Anton grew up in a Greek family spending her summers in Kalamata, in the Peloponnnisos region of Greece, side-by-side in the kitchen with her grandmother and other local foodies she had the good fortune of being exposed to. Anton attended various culinary programs in Houston throughout the years, later leading her to work in a variety of culinary roles in the area, including establishments focusing on Italian and American cuisine, and most recently as the Culinary Director for the non-profit, The Recipe for Success Foundation, focusing on seasonal, plant-based menus.

Anton describes VeganAF(ish) as “Seasonal Opportunistic”, “Plant Based Medicine”, and “Whole Food Seasonal”. She works with local farmers to source the best ingredients showcasing them with minimal interference of seasoning and light cooking techniques in order for folks to experience what the actual ingredients SHOULD taste like, in its peak of freshness. VeganAF(sih) can be found at the Heights Mercantile Farmers Market, Rice Village Farmers Market, MKT Sunset Market as well as through various pop-ups and private events in and around Houston. Her musings and cooking can be followed on Facebook at @chefparis as well as on Instagram at @chefparis and @vegan.af.ish.
