A true Texan at heart, Chef de Cuisine Martha Wilcox helms the kitchen at Indianola, where a Modern Texas ethos is reflected in all its offerings. Born in San Antonio and raised in Beaumont, Texas, Wilcox’s passion for cooking began in the church, where each week she looked forward to whipping up eccentric potluck dishes for their community dinners.
While studying for a bachelor’s degree in Culinary Management from the Art Institute of Houston, Wilcox interned at Recipe4Success, a foundation that aims to combat childhood obesity by teaching children about seed-to-plate nutrition. Upon graduation in 2011 and through internship connections, Wilcox landed a role as a line cook at Café Annie. There, she learned the power of unwavering loyalty and building trusted relationships with colleagues, supervisors, vendors, and guests.
Today, Wilcox brings over a decade of experience from time spent in some of Houston’s most acclaimed kitchens, including Pax Americana, The Pass & Provisions, and fellow Agricole Hospitality restaurant Revival Market to the Indianola concept. She celebrates Modern Texas as a beautiful variation of cuisines that represent the diversity that Texas is known for. In her home kitchen and even more so at Indianola, Wilcox loves to create a menu that offers a mix of traditional flavors and modern applications, drawing inspiration from history, culture, and even visual art.
With an overarching goal of creating community through food and service, Wilcox aims to tell some of her own personal food memories through Indianola’s menu, all while maintaining the restaurant’s standards for authenticity, genuine hospitality, and high-quality, local ingredients. When her chef’s apron is off, you can find Wilcox on the move – hiking, lifting, or on a long walk – or stimulating her mind through DIY projects, taking in live music, and visiting local museums.
